Joanne met with a speech language pathologist two months ago because she was coughing when eating and had a consistently hoarse voice. The speech language pathologist recommended that Joanne follow a Total Minced diet with thin fluids based on the Winnipeg Regional Health Authority Nutrition and Food Services departments’ diet compendium. Joanne has been following the diet for the past two months; however, she has lost 10 pounds during this time period, as she does not find her food very appealing. Concerned with her weight loss, her family has been helping with meal preparation. Items that they have prepared for Joanne include blueberry muffins, oatmeal raisin cookies, scrambled eggs, pecan pie, fish sticks, quiche, risotto, french fries, perogies, croissants, and cream of tomato soup. 1. Identify two foods that Joanne’s family has prepared for her that are not compliant with a total minced diet. Discuss how these foods could be modified to make them compliant.
