2 Part 2 Clinical Activities: Caring for People Who Are Underserved – Food Insecurity The 50-year-old mother in the family I work with has been diagnosed with uncontrolled diabetes and hypertension. She and her husband live together in a house. She and her husband each receive $300 in Supplemental Nutrition Assistance Program (SNAP) benefits each month. She claims that she and her husband can afford to spend $100 a week on groceries. She says she makes enough food for leftovers on other days and cooks about three times a week. According to her, she goes out to dine three or four times a month. There is one food bank and two sizable supermarkets, Aldi and Food 4 Less, in the community of Fresno. At home, she keeps her food and meals in her pantry and refrigerator. She claims that she meal preps by cooking three times a week and preparing enough food for leftovers. She can drive to the grocery shop because she owns a car. Nevertheless, she might not always have the money for gas, depending on the price. She says that if she needs it, her friend will go to the grocery shop. I gave her and her husband the contact details for local food banks and other support agencies, like The Food Pantry Fresno. I also gave her and her husband the numbers for Fresno County Department and FindHelp.org. These organizations help persons in need with a variety of services like gas cards, food vouchers, and transportation. I also gave information on diabetic support groups such as the American Diabetes Association's website. According to her, her blood sugar levels fluctuate and can be anywhere from 80 and 350 mg/dL. This is a worry raised by her husband. She further states that she does not consistently adhere to a diabetic diet. When we talked about how comfortable she and her husband are with using the apps on her phone, they said they are both comfortable and frequently use them. I helped her download and install two apps on her phone: Diabetic Meal Plans and Weekly Meal Planning and My Diabetes Diet and Meal Plan. I had her and her husband demonstrate to me
