In reality, Louisiana Creole cuisine is a mixture of several different and varied cultures. Many American cuisines are derived from the slang phrase “soul food,” meaning a selection of foods and are the traditional cuisine of African American of the Southern United States and of black communities. Slave owners fed their chattel as cheaply as possible, often with throwaway foods from the plantations, forcing the slaves to make do with the ingredients at hand. Most slaves’ vegetables were the tops of turnips, beets, and dandelions. Later the slaves were cooking new types of greens: Collards, Kale, Mustard, and Pokeweed. The slaves also used lard, discarded cuts of meats like oxtails, ham hocks, chitterlings (pig small intestines), and skins to give the greens a better taste. There was little waste in the African American kitchen. If there were leftover fish they would make croquettes. Stale bread became bread pudding and each part of the pig had its own special dish. They even used the juice from the greens to have with cornbread, which made gravy. While examining a culture, most people would typically think of the language, religion, style of dress, and customs of that particular group, but some people fail to realize the importance of that culture’s food. During the late 1800s and early-mid 1900s, many various ethnic and cultural groups immigrated to the United States and brought with them their cuisine. Those with less money had to use food ingredients that were available to them. Hard work and little time called for easily made meals such as soups and stews. Roux is the base for many sauces and soups. The Erie Canal opened in 1825, inviting many new European settlers, who brought their traditional recipes with them.
Outside of his religion, JJ Alex engages in other traditions that affect the food he eats. Thanksgiving was always a custom in his house as far as he can remember. He and his family enjoy turkey, stuffing, collard greens, candied yams (sweet potatoes) and many other dishes on this day. What surprised me was that many of his dishes mentioned had a lot of southern influence to them. I thought to myself “how does someone who was born and raised in the northeast be exposed to so much southern style food?” I then proceeded to ask, “So where does the southern edge come from?” He told me that his mother’s side of the family is originally from Texas. He can remember his grandfather’s famous collard greens, dumplings, and pickled cucumbers.

While many Americans may not really think about their native culture, it does exist (as the “mom and apple pie” stereotype demonstrates.) Like most world cultures, it arose from myriad factors, not the least of which is its immigrant history. Many of the foods and customs that we take for granted as part of the American tradition actually got their start elsewhere. Here’s a look at four different ways immigrants have influenced American culture.
In America, people of a religious background tend to follow one of the five major religions: Christianity, Judaism, Islam, Buddhism, and Hinduism. Although, numerous people are Jewish I have never received the privilege to encounter someone who’s religion is Judaism. My question is if Judaism is listed as one of most popular religions in America, why have I not had the fortuity to meet a religious Jew? I’ve met others whom are Christian, Catholic, Jehovah’s Witness, and Muslim, so to me Jews are a minority. I decided to engage in Sabbath so that I become more educated about Jewish beliefs, rituals, and culture. Being that I have only attended Christian worship services I figured participating in a Shabbat service would be a new and interesting.
