Recipe #41 - Oatmeal Muffins in Maple Syrup

Ingredients:
Dry ingredients:
• 1½ cups whole wheat pastry flour
• ½ cup steel cut oats
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• ½ teaspoon kosher salt

Wet ingredients:
• 2 servings flax eggs (recipe included)
• 1¼ cups coconut milk
• ¼ cup coconut oil
• ¼ cup pure maple syrup
• 1 teaspoon vanilla extract

Directions:
1. Preheat oven to 375°F or 190°C. Place paper liners into muffin tins. Combine dry ingredients in 1 bowl; wet ingredients into another. Pour wet ingredients into dry. Stir.
2. Spoon equal portions into 11 paper lined muffin depressions. Bake for 25 minutes, or until toothpick comes out clean.
3. Remove from oven immediately. Cool muffins on cake rack. Serve. Recipe
