Personal Statement
I discovered dietetics my senior year of high school when my mother became sick to where she could barely leave the house. Physicians and specialists could not explain what was happening, until one integrative medicine physician suggested food allergies. She was finally diagnosed with an allergy to casein, and Celiac’s disease. Her diet underwent major changes, and as I helped her adjust, I recognized the powerful relationship between food and health. Having first-hand experience with the stress of changing an entire lifestyle, I understand how nutrition affects not only a patient but their entire family. I would like to work as a pediatric dietitian to support children and their families, that are just as scared as my family was five years ago. Her patient suffered from multiple disorders, and was considered a “problem child.” The interdisciplinary team told the dietitian to “keep it short” because they felt she could not help him. As we walked into the room, the dietitian greeted the patient, and then introduced me to his mother. I simply knelt down to say hello to the boy and asked him about the stuffed elephant he was holding. To everyone’s surprise, he threw the toy at me and said “ I want nice lady to have it.” The mother and dietitian were both shocked because he had never spoken to the clinical team before. I was able to make a difference by breaking the communication barrier limiting this patient’s treatment by treating him like any other patient. My short-term goals are to enhance my knowledge of medical nutrition therapy, to gain experiences in all aspects of the dietetic field especially in clinical nutrition setting, and to become an RD. My long-term career goals are to become Certified Diabetes Educator, to engage and serve in community nutrition, and to promote wellness and preventive health care for socio-economically and culturally fragile populations. The U.S. population has become increasingly diverse in ethnicities and cultural backgrounds. Therefore, I believe that providing patient-centered education with respect on the differences of cultural, religious, and dietary practices are the keys to becoming a successful educator in nutrition counseling and education.
Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. Like me, most Americans are unaware of the importance of eating a healthy diet and consume too many foods without the proper nutrients. Throughout my life I have been fortunate. I have not had any major health problems, and have been able to consume most foods without having to worry about gaining weight. These last two years, however, I started to gain weight and have become concerned with my diet. Illegal immigrants should be allowed in the United States because it would stop the separation of illegal families. According to the Applied Research Center report “there are at least 5,100 children in foster care due to a parent being deported or detained. It estimates that another 15,000 children will enter the foster care system within the next five years. The likelihood of these children being reunified with family is slim” (Immigration, Deportation, and Family Separation ). Kids are being left behind or left in foster homes just because their parents got deported. The separation of families has to stop to keep the families together so the kids won't be staying in the U.S alone with no one to take care of them except for total strangers
Nutrition is important to understand because it is a significant contributor to the health and wellness of a human being. Nutrition can determine the weight of a person, the performance of organs and the body’s ability to prevent or accelerate certain diseases. Health and nutrition can be influenced by several factors such as family, friends, peers as well as physical and mental stress. As a young child, the immediate family is the biggest influence on nutrition because they are the first role models and establish the initial habits that the individual will develop. In 1899 the Wright's brother invented a kite with two wings, but they kept working on it and created sophisticated mechanism that measured how the wings could handle the environment. They would make new improvements to the kite and finally they made the first aircraft that could be piloted in the air. This happened because they found a rudder on the tail of the plane and flaps on the wings that would allowed the airplane to be controlled (History of the First Airplane). The noticed that the pilot would be able to direct where ever the plane was going and at what height.
Ever since I can remember, I have always wanted to do something special in life. I was born in a small village in Mexico where public health and education were very limited. In 1996, my family and I got the opportunity to move to the United States. This move brought me closer than I had ever thought possible to accomplishing my dream of becoming a registered dietitian and working in public health nutrition. I have always valued my education because where I am from it was really difficult to study beyond middle school. Here, in the United States, I have gotten the chance to further my education beyond high school.
Since we have been learning about nutrition in class, our task was to record a food log. Nutrition requires a well-balanced diet containing nutrient and vitamins like amino acids and fatty acids. Over the past seven days I have been recording and have been looking very carefully at my intake of nutrients, minerals, vitamins, and fats. In our task, the objective was to record the basic foods we ate during the period of seven, but it did not require recording every single detail or our intake of food. Doing this food log was a pain and it was disturbing because I never wrote about what I ate like breakfast, lunch, dinner, or additional meals. Before this semester started, my diet was in horrible condition. Learning all about nutrition and what it can and will do for your body has made me more aware of what I eat. Every Time I look at my plate, I think “ oh this is carbs, protein or fats”. I am changing the way I feed my body, and this food diary has showed me what I have been missing from my diet.
Born two months premature at just under five pounds, I like to believe that starting small can lead to big things. My parents were informed that it was unlikely that I would attend public school or gain the ability to speak well. But they were undaunted and instilled in me a can-do attitude. For the next dozen years I worked hard to overcome those setbacks with a steady routine of speech, motor skill and nutrition therapy. Without knowing it then, those difficult experiences were building my character and inspired my future. During my hospital volunteer work, I learned about the critical role diet plays in health, particularly for expectant mothers. Working with the Food Trust and Act in Faith nonprofits, I discovered how difficult it was for low income people to access nutritious food; and working with Aramark I developed a love and respect for preparing and serving healthy meals. Now, as I move on from West Chester University, I am proud to say that I am able to pay forward the kindness I received as a child, and the knowledge I 've gained through my studies and work, as I pursue a profession in dietetics. Good and accessible nutrition is vital for every person 's wellbeing, and I want to dedicate my life 's work to this field.
One of the core knowledge and competencies as an entry-level dietitian, specified by the Accreditation Council for Education in Nutrition and Dietetics (ACEND), is that “Course content must include the principles of food science and food systems, technique of food preparation and application to the development, modification and evaluation of recipes, menus and food products acceptable to diverse groups” (ACEND 2014). To fulfill this competency, most colleges and/or universities include a course such as food science and/or experimental food as one of the required courses in the dietetics curriculum. I am applying for the programmes relating to teaching and nutrition because I see positively my career in the education sector. I have been studying nutrition in community context and I take an interest in studying diet journals that analyse the sports nutrition. My passion for the sport nutrition and the low fat ‘methodology’ of food preparation is vital. My undergraduate course gave me a great satisfaction to learn the healthy lifestyle form a holistic perspective. I am interested in the Masters of Science in Nutrition and Integrative Health program offered at Maryland University Integrative Health. The unique holistic approach of the nutrition program is an aspect that I am very passionate about.
