Spinning Plates is a film that follows three chefs from three very different parts of the United States that share a very similar story in the food world. The film starts off in Chicago, Illinois at the molecular gastronomy restaurant called Alinea. Grant Achatz and Nick Kokonas are cofounders of the 3 Michelin star awarded restaurant known for the elaborate deconstructions and preparations of typical flavors. Chef Achatz claims that it takes a staff of five people a total of twelve hours to make a piece that can be consumed in 2 ½ bites. He continues on to say that his food is an expression of himself. Chef Achatz gets tongue cancer and almost dies, but the University of Chicago is able to help him keep his tongue. The film progresses to Breitbach’s Country Dining in the very small town of Belltown, Iowa. The restaurant began in the late 19th century by the Breitbach family who migrated from Germany. It serves anywhere from a couple dozen to a couple thousand people every day. It not only serves as a restaurant, but as a community center for the small town. The restaurant burned down twice and through the goodness of the people in the community, it was rebuilt twice. The last restaurant is called La Cocina de Gabby in Tucson, Arizona and its run by Francisco Martinez. His restaurant serves traditional Mexican food and the head chef is his wife, Gabby. The business is run by Francisco Gabby’s mom, sister, niece, and their daughter, Ashley. The Martinez’s decided to open a restaurant because of the struggle to make a decent living. They only serve a small amount of people every day and continue to struggle until they are forced to shut down their

Anthony Bourdain, world renowned chef and television personality, in his autobiography Kitchen Confidential (2000), conveys his experiences working in the restaurant business-high tension and new stressors at just about every corner. More specifically in the chapter “Food is Pain,” he convinces his audience that the abilities to maintain concentration, handle stress, and keep pace with the quick movement of a high-pressure environment are extremely important. Bourdain shapes this through an anecdote of his past experience working under boiler man (Tyrone) at the Dreadnaught, with his development of ethos, use of imagery, and manipulation of syntax to not only draw in but appeal to a wider audience.
Higashi and her husband both share a passion for eating at immigrant restaurants. She explains the many difference between the average fast food restaurant and immigrant-run restaurants. She dived into the atmosphere and how all the immigrant workers coincided with one another in order to have a great restaurant. Everyone ate the same delicious food and kids did not have those kids menus that one would find at American restaurants. She set the atmosphere to appear friendly and as if you were eating dinner at one's house. These type of restaurants seem way better than any fast food restaurant. When food is made by real people who care about what they are making, it shows. Nothing shows this more than when the cook herself came out of the kitchen

Before Alain worked for Fernand Point's “La Pyramide” in Vienne, Chapel worked in his the kitchen at his dad's bistro and inn and this where his received his training along with other local shops. Once he returned to his family's bistro turned restaurant it earned a Michelin star. When Chapels father died in 1970 Chapel opened the inn as a hotel and in 1973 he received his third Michelin star at the restaurant. This was a very special achievement because at this time on 19 restaurants in France had received this highest of honours. On July 10,1990 Alain Chapel died of a stroke and around the time of his death he was planning on opening a restaurant in Florida.Suzanne(his wife) and sons kept the hotel open after his death and Chef Phillip Jousse was now the head chef and had full charge of the menu under the condition that Chapel’s classics were featured. The Making of a Chef was a fascinating book that alternated my perspective on cooking giving me a clearer view of working through a culinary program. Michael Ruhlman gave readers a glimpse of life within the Culinary Institute of America, which is the most critical culinary school in the United States. Nothing is left to instinct or assumed information, everything is shown whether it is with culinary maths or precisely how you lay out unresolved issues for the ideal stock. Everything was just striven to be excellent, not good, nor O.K., but miraculously perfect.
