The onions and peppers sizzled the moment they touched the hot oil. The strong garlic scent filled my nostrils as I dropped it into the oil and mixed, making sure it did not burn. The whole house was clean and mom was helping me prepare chicken fajitas and freshly made tortillas. “Tonight is going to be memorable”, I thought, but not just because of the get-together with my friends. I was learning to cook something new and as I cooked the stresses of the day and school seemed to dissipate.

Since the dough was prepared ahead of time, we immediately started forming small balls of dough, which would be placed in the prensa (press) and flattened to form the circular tortillas. We each took turns pressing down on the dough, taking it out and carefully laying the tortilla onto the hot comal (stovetop griddle) without breaking it. My mom took the flattened dough and laid it across the palm of her hand before finally turning her hand outwards and laying the tortilla perfectly on the comal (stovetop griddle) showing us how to properly make the tortillas. However, as we each took turns our tortillas resembled more of half circles instead of the full circles they were supposed to be, as we turned our hands to lay the tortilla to cook they had folded over. “Casi, casi” (“almost, almost”) my mom said, laughing. It was not as easy as my mom made it look. Moreover, the way the tortillas came out did not matter because at the end it was the memories and the learning experience that made it all worth it.
Finally we all sat down with our food ready to relax and watch the movie. Cooking not only helped bring people together but also taught me important skills that I could use later in life. As I was enjoying the rest of the night I could not help but think of how as I was cooking time did not seem like it was running out and I was not stressing about the millions of things I had to complete. I was having fun while feeding my passion for learning at the same time. For now cooking is my passion but I can not wait to see what will capture my attention

To make the perfect taco dinner there are a few things that have to be made. There are three things that have to be made for the dinner. There are many things involved in making this big taco dinner. Each year my family celebrates Christmas eve by making a lot of tamales and lots of food for the whole family, my cousins and uncles and aunties come over to eat and to have a good time. once the clock gets to 12:00 all the kids open their presents and after every kid has opened their present now its the adults turn to open their present. Mexico has many fascinating things about it. The most interesting to me, is the language and food. The word "Mexico" is derived from the word “Mexica” (pronounced "Me-shee-ka"), the name for the native group that settled in central Mexico in the early fourteenth century and is best known as the Aztecs.
Most people do not look at the ingredients on anything they use. While doing research, I realized that corn is in practically everything. When it comes to food products that include corn, I use quite a bit. Popcorn, tortillas de maiz, tortilla chips, tostadas, frozen corn, hominy for posole and menudo, and masa used to make tamales, sopes, and gorditas are a few of them. Corn plays a very important role in Mexican cuisine and I use most of the foods listed many times a month. Though I will say the hominy for posole and menudo is more of a special occasion dish and is used a bit less frequently. For favorites, I would have to say popcorn and masa are at the top of my list. These are the products that people know for sure that corn is a part of.

Miles and miles of sugar cane, coffee and rubber trees bordered the freeway. Large Dole or Del Monte semi-trucks made up most of the traffic. Although the region is very rural, it appears to have lots of potential. A tightly knit community, and a diverse range of potential crops to be grown in this area made this location ideal for the non-profit Semillas para el Futuro—“Seeds for the Future.” The organization worked to empower Chocola residents to grow nutritious and diverse food using home gardens. However, some of the gardens were experiencing uncontrollable pests that were being exterminated using chemical pesticides. The intense rainy season was also problematic for the exposed crops, creating soil runoff.
