2. Salivary amylase, an enzyme in saliva that breaks down starch, has an optimal pH of 6.7-7.0. Explain why salivary amylase is active in the mouth, but becomes inactive in the stomach. the stomach has a gastric juice which contain HCI. once its denatures it cant break down anymore glucose or starch it is then deactivated.
