It is also known as triglyceride, an ester composed of glycerol and long chains of acyl fatty acids.

Explanation of Solution

The fatty acid composition A has the highest melting point and B and C are expected to be at low melting point.

Since the composition A contains 21.4% palmitic acid and 27.8% stearic acid which are saturated acids, according to the concept as the number of carbon chain increase the melting point increases and when the number of unsaturation increases the melting point decreases. In composition B and C, the more percentage of unsaturation is available so that Composition A has high melting point. Since both B and C are having low melting points, and the presence of unsaturated bonds made them liquids at room temperature.

Conclusion

The triacylglycerols with highest melting point and fatty acid expected to be liquid at room temperature was identified.
