Chapter 3, Problem 3ITD
Summary Introduction

To review:

The ranking of three diets from best to worst according to their potential effect on cardiovascular health. The results of the study are shown in the table given below:

Effect of Diet on Lipoprotein levels (mg/dL or milligram per deciliter)
cis Fatty acids Trans Fatty acids Saturated Fats Optimal level
LDL 103 117 121 <100
HDL 55 48 55 >40
LDL-to-HDL ratio 1.87 2.43 2.2 <2

Introduction:

Lipoproteins are referred to as the proteins that are covalently linked to the lipid groups. They are mostly found in the group of biomolecular complexes that are present in the blood plasma of mammals (humans). Plasma lipoproteins help in the transportation of different lipid molecules from one organ to another through the bloodstream. The lipid component of lipoproteins is insoluble in water due to the presence of amphipathic properties. These surrounding protein molecules and other phospholipid molecules make the lipoprotein water-soluble and thus, help in their transportation into the blood or lymph.

Shortly after a typical meal, your blood glucose will rise from its fasting level of 4.4mM to 6.6mM. How many grams of glucose does this increase represent?  (An average adult male weighing 70 kg has a blood volume of about 5 L.)
1. How does Rashamel’s current sodium intake compare with the AI?   Answer: 2.  Which five foods provide the most sodium?   Suggest a substitution for each that would reduce his sodium intake to 2300 mg or less. Answer: Rashamel does not consume enough fruits, vegetables, or low-fat dairy products to meet the recommendations of the DASH Eating Plan for a 2600-kcal diet (see Figure 10.18b: page 403 textbook). 3. Suggest foods that Rashamel could add to his diet to meet these recommendations. Answer:   Adding foods to meet the DASH recommendations will increase Rashamel’s calorie intake. 4. What could Rashamel eliminate from his diet to reduce his calorie intake to about 2600 kcal while still meeting the DASH recommendations. Answer:
Why “might” an obese animal require more vitamin D in their diet than an animal of moderate body condition? Please be sure to provide mechanistic explanations (e.g., storage, catabolic and anabolic processes) by which the vitamin D requirements would be increased. Lastly, how might rapid weight loss affect vitamin D levels in the blood and the potential for toxicity.
