AMY-1 is the gene that encodes for the enzyme salivary amylase. Humans possess this gene but the number of copies of that particular gene highly depends on dietary habits. Varied numbers of the copies of AMY1 genes are observed among people. The people consuming high-starch diets have more copies of the AMY1 gene when compared to people with low-starch diets.
