What once was a dream 15 years ago, has now become reality for a local family and friend thanks in part to a medical emergency. “The dream of the truck and trailer started about 15 years ago. It’s a three man operation that started with me, my best friend who I met cooking at Texas Roadhouse, and then my dad. We talked about this for a long, long time then earlier last year my dad had a heart attack. We were sitting around and said ‘Okay. This is it.’ My dad got better and we had talked about this long enough so we said ‘Let’s do it!’” said Beau Hays, owner. He worked at the Petroleum Club for a long time and made some really good catering contacts. He went to culinary school at BPCC and that kind of became his specialty when he was there. The choices about most of my food truck decision were of two sorts, the ones made as they came and the ones who were planned much in advance. The large part of the food truck assignment, the truck itself, was one of the few drawn out parts of the project. For a while I thought of a few ideas, the first of which was the name, Seaside Rainmaker. The two main parts of my project really revolved around the lack of water in the world, and the technological solutions provided to solve them, the real main focus of which was desalination. Seaside, really made sense because it is both related to water and sounds like a generally positive place to be, even if my project really was not tackling positive issues.
