After realizing that all of the food and water consumed by their family was either piped, shipped, or driven to them in the middle of the desert, novelist Barbra Kingsolver and her family decided to pick up their lives and move from Tucson, Arizona to to her childhood home of tobacco and dairy farms in southern Appalachia. Kingsolver and her family intended to spend the next year living in a more connected way to their food and where it comes from, and this book is the result of that experience. There is way too much fascinating information to unpack in this book - 99% of the 400 million turkeys consumed in America annually are artificially inseminated by humans! (p. 90). And we totally misunderstand lactose intolerance (p. 136-37). One would have to read this book one hundred times over to fully critique its value. But it is good! Great even. There is so much to learn about the world and how food systems affect climate change and how climate change affects ecosystems and all living things. Kingsolver provides a tool for change through this book by suggesting ways of living that reduce our harmful footprint on the earth. She does this by sharing her story of eating locally for a year and pairing those stories with loaded insights about how the current industrial food and farm systems are ultimately destroying the world. At the very least this book should cause people who have not before, to stop and evaluate their participation in this industrial food system. Their actions and inactions may even be changed by their uncomfortable awareness of how most of us are eating. Kingsolver makes a very good point when writing about her search for fresh fruit during a season when fruit doesn 't grow. She makes the reader aware of the fact that shopping for fruits and veggies out of season means we are impatient. To really make this point stick, she adds another commonly shared
Barbara Kingsolver was already an established novelist when she moved from drought-ridden Arizona to her family farm in Virginia, as chronicled in her book Animal, Vegetable, Miracle. Kingsolver was determined to go totally 'local' by growing her own food and only consuming foods grown locally and in season. The ultimate goal of Kingsolver's experiment was to have a zero carbon footprint. This meant eschewing citrus fruit flown in from Florida and California and selecting locally-grown rhubarb instead; collecting her own chicken eggs, and killing her own turkeys. Kingsolver was unimpressed by 'going organic,' given the extent to which corporations dominated the organic industry and she was unimpressed by vegetarianism's argument that it offered a more sustainable lifestyle. "I'm unimpressed by arguments that condemn animal harvest...while ignoring, wholesale, the animal killing that underwrites vegetal foods" Kingsolver writes (Kingsolver 222). Pesticides, she points out, kill animals to ensure that we have vegetables and soy burgers.

The articles “The Climate Crisis at the End of Our Fork” by Anna Lappe and “Why Bother?” by Michael Pollan urge us to see the connections between food and the environment. In the article “The Climate Crisis at the End of Our Fork”, Lappe insists the methods used in food production and distribution have a massive impact on the planet. In the article “Why Bother”, Pollan provides us reasons why people should bother to help stop global warming. There are three main causes between food production and food distribution that play a big role in global warming. Changing the way food is produced and distributed could diminish the dangerous effects of global warming. However, in order to stop global warming everyone has to assist as a group instead of individuals.

The Omnivore’s Dilemma, written by Michael Pollan, gives light to the question, “What should we have for dinner?” that he thinks Americans today cannot answer simply due to the fact that there are too many food options. This book serves as an eye-opener to challenge readers to be more aware and accountable of what is consumed daily. In order to understand fully where our food comes from, we must follow it back to the very beginning. Pollan goes on to discuss three different modern food chains in which we get our food: the industrial, the organic, and the hunter-gatherer. By tracing our food back to the beginning, we can understand that most of the nutritional and health problems America is going through today can be found on the farms that make our food and the government that can decide what happens. America deals with many food related illness such as, heart disease, obesity, and type II diabetes. Majority of a human and animals diet consists of being corn-fed leading to a high cause of obesity in the United States these are just some of the many diseases that come with over processed foods and diets we are unaware of. In this study, we will highlight the environmental and health issues and impacts related with modern agriculture and how these systems can be made more sustainable.
In my first year of college I have been introduced to copious amounts of new information and topics that had never crossed my mind. Becoming familiar with new ideas, food production and it’s impacts of the environment both locally and globally became of interest to me. I have been a vegetarian for about four years and as I have attended college I have learned more about the state of the issue with food production and sustainability. When presented with the list of books for our independent project Omnivore 's Dilemma immediately jumped at me. When Pollan stated in the introduction, “Farming and food industry produces even more greenhouse gases than all forms of transportation put together; the way you eat affects the world more than anything else you do,” I was hooked.
What am I exactly eating? Where does our food come from? Why should I care? “The Omnivore’s Dilemma” may forever change the way you think about food. I enjoyed Mr. Pollan’s book, “The Omnivore’s Dilemma” and learned a great deal of information. Pollan’s book is a plea for us to stop and think for a moment about our whole process of eating. Pollan sets out to corn fields and natural farms, goes hunting and foraging, all in the name of coming to terms with where food really comes from in modern America and what the ramifications are for the eaters, the eaten, the economy and the environment. The results are far more than I expected them to be.
It’s no secret, Americans love their processed, energy-rich foods. And undeniably, this love affair has led to an obesity epidemic. In spite of the evidence against processed food, however, there are some who believe the problem may hold the key to the solution. David Freedman, author of “How Junk Food Could End Obesity,” criticizes Michael Pollan for his argument in support of unprocessed, local foods due its impracticality. Freedman’s criticism is based on the idea that “It makes a lot more sense to look for small, beneficial changes in food than it does to hold out for big changes in what people eat that have no realistic chance of happening” (Freedman Sec. 1). He contends that processed foods already play a big part in our diets, so instead of trying to expand the wholesome food business, we should try to make processed foods healthier. Freedman’s argument, however, overlooks many negative effects of processed foods and conventional farming. Michael Pollan’s wholesome food movements takes into account not only the obesity problem, but also the quality of the environment and the rights of farmers. Although Pollan’s solution to obesity may not seem the most efficient or time effective, the trades offs it provides in terms of environmental sustainability and the well-being of farmers outweigh the loss of efficiency.
Brought up in the southern of China, I often heard about that people from there “eat anything with four limbs except tables, anything that flies except aero planes, and anything that swims except ships”. Nevertheless, I eat more fruit, vegetables, nuts, and whole grains but less meat to make careful choices for environmental protection. Similarly, Kathy Freston argues that animal agriculture is one of the top contributors to global warming. In her Huffington Post selection “Vegetarian Is the New Prius,” Freston lists how many emissions of greenhouse gases people make when they eat meat and illustrates the consumption of tree in animal agriculture. She effectively convinces her audiences that the livestock results in the most serious environmental problems and encourages people to lead a greener diet to protect our environment. However, ardent craving, poor health, and perpetual hassle and cost prevent all Americans from being vegetarian.

In fact many people today give little or no thought to food production. Instead, we drive to a supermarket and buy whatever we want to eat. We have access to many restaurants and fast food outlets, so we not only have ample food at our fingertips, we don’t even have to prepare it if we choose not to. Not only has increased consumerism resulted in ecological imbalance, it is also depleting earth’s natural resources, which in turn is creating an environmental crisis. One of the biggest products being consumed is food. Rapidly growing world’s population requires increased food production. Author Anna Lappe does an excellent job expounding on the impact that food production and distribution has on the environment. Lappe (2015) argues that modern practices of food production directly contribute to air pollution and increases carbon dioxide emissions (par. 11). Crop production uses an absurd amount of land, artificial fertilizer, and harmful pesticides that seriously pollutes the environment and threatens young children and wildlife species. While all of us relatively understand how driving cars, leaving the lights on, or using too much water can affect the environment, there is one massive human activity that is frequently overlooked—eating. From growing, to processing, to distributing, and finally consuming, our agricultural system uses an immense portion of our planet’s limited resources and emits large amounts of greenhouse gases that have drastic effects on the environment. Because of this, it is imperative to understand the environmental impacts of the type of foods that we choose to include in our diets. These are two extremes, but people who live in the developed world on average still eat twice as much meat compared to people living in developing countries. And while people in developing countries might consume less meat and dairy now, growing populations and wealth will strongly increase their consumption. This will have negative impacts on the environment - and on ourselves. More than 25% of climate gases that contribute to climate change are associated with our food. This is also expected to increase over the next decades. But our diets are not only unsustainable, they are also unhealthy leading to malnourishment and obesity.
On Friday, April 25, 2014, I attend the event Global Climate Change Symposium organized by the West Valley College Global Citizen and Suitability Committees from 1:00 to 2:30 PM. In this event the speaker was Dr. Daphane Miller, MD., family physician, writer and Associate Professor in the department of Family Medicine at the University of California San Francisco. Dr. Daphane Miller is also a family physician. One thing that I believe that is sticking to know first and foremost is that she is a doctor. She sits at her office three days a week and she sees patients all day long and she takes care of them, one of her many prescriptions to her patients are good eating, among other things. The mayor focus on Dr. Daphane speech was Farmacology since she said once “if you care about your food, you ultimately have to find out and care about how it is grown and where it comes from.”
