In this article, the author disproves the well-known fact that kale is a healthy superfood when eaten in large quantities. She explains that while it still has great benefits, including a surplus of vitamins, fiber, and its proven ability to fight off heart disease, when eaten raw it can affect your metabolism. To be more specific, it contains a biochemical called progoitrin which can decrease a person’s thyroid gland production, as well as thiocyanate ions which can prevent iodine from getting to your thyroid. Eaten in excess quantities, both of these compounds can affect blood sugar, weight, and overall metabolic health. In this case, I specifically focused on the effect of a shift in demand on a market in long-run equilibrium. After reading the article, I imagined the affect it would have on readers. The author is clearly making people shy away from eating kale because of its health risks. Although many people probably aren’t anywhere near that “large amount” of kale that could cause their thyroids to swell up, chances are they will turn away from buying it next time they see it in a grocery store. I’ve identified the market for kale as long-run because farmers can easily enter or exit the market, buyers and sellers are price takers, goods are standardized, there are no transaction costs, and because market participants have full information. In this case, they will surely exit the market as demand decreases. First, the demand curve will shift to the left, decreasing the equilibrium quantity and price. As this happens, firms are not creating an economic profit, a clear incentive for them to leave the market. As they leave the market, the supply curve shifts to the left pushing price back up to the equilibrium level.
