Studies show that unwashed or lightly rinsed vegetables can harbor pathogenic bacteria and have been implicated in numerous foodborne infections. The objective of this experiment was to obtain a quantitative viable plate count of enteric bacteria present in a sample of broccoli sprout water. To enumerate the number of bacterial colonies present in the sample, we performed serial dilutions of broccoli water spread onto MacConkey Agar plates. MacConkey Agar is a selective and differential media. It is used to select enteric bacteria and differentiate lactose-fermenters from non-lactose fermenters. Sulforaphane is used for the treatment and prevention of several types of cancers as it inhibits the enzymes that create carcinogens and helps the body to metabolize and excrete them. Research shows that a handful of broccoli sprouts provide up to 50 times the amount of sulforaphane as one pound of fully mature broccoli, thus making them a popular alternative for meals to the fully mature plant. Studies are still being conducted as to the health benefits of broccoli sprouts, and there is conflicting information as whether they should be eaten raw or cooked for the maximum health benefit. Research shows that sulforaphane is sensitive to heat and thus several sources recommend that the sprouts be eaten raw to obtain the full nutritional value. (Broccoli Sprouts, n.d.). Additionally, some reports indicate that there is no risk associated with eating raw sprouts and that incorporating a small amount of sprouts into a daily balanced diet can protect against H. pylori, bacteria that is known to cause gastritis, ulcers, and stomach cancer. (Weil, A., MD., 2016). Broccoli sprouts are relatively easy to produce and can be grown in large quantities quickly with a minimal space requirement. Broccoli seeds can be grown in soil or placed in glass jars, soaked with water and placed in a warm, dark location to begin germination.
