The movie, “In Defense of Food” is written and created by Michael Pollan. In this movie Pollin addresses the question of the correct way to eat. Additionally, he explains how the food industry gains from the confusion over what is nutritionally correct, an idea created by scientists called nutritionism. Pollan discusses how control over what families ate shifted from cultural factors, such as mothers and traditions, to marketing and the food industry. He concludes that we can relearn which foods are healthy, develop simple ways to moderate our appetites, and return eating to its proper context. I picked this movie because of its title. The first idea was that stress can increase health risks. In module 3, we discussed how stress increases susceptibility to illness, slows digestions, alters endocrine system, and causes molecular changes in chromosomes. Towards the end of the movie, Michael Pollan says that thinking about what you should and should not eat causes stress and that the stress is more harmful to our bodies than the type of foods we eat. The second point that I recognized as being addressed in class was the concept of the food industry exploiting us in order to obtain more money. Michael Pollan discusses the concept of nutritionism, the ideology of food being comprised of nutrients. Nutritionism divides its world along black-and-white lines: good nutrients and bad nutrients. However, Pollan states, there is ongoing debate about which nutrients go in which categories, a phenomena that the food industry benefits from. Whether it is low protein breakfasts in the form of cereal to no fat or high fiber, the food industry always makes sure to put food on our grocery shelves with “no fat” or “rich in fiber” labels to grab the consumers attention and get more money from us, when in fact the food may not even be good for us. This is a similar concept to what we learnt in class in module 4. When I went on my grocery scavenger hunt, I noticed how the grocery store was set up to make the consumer spend more. One thing I noticed that extremely bothered me were that staples were located at the back of the store which forces you to go down aisles, increasing the chance the consumer will buy more. The food industry does not care about consumers but money and will do whatever they need to in order to get their money. In the article “Escape from the Western Diet”, Michael Pollan suggest to the people that they should stop eating a western diet because western diet is also responsible for western diseases such as diabetes, high blood pressure and many more. In his article he said that “People eating a Western diet are prone to a complex chronic diseases that seldom strike people eating more traditional diets.” He also gave the solution of this problem by telling people to stop eating a western diet. New theories made new treatments to treat different diseases. In his point of view, if people want to escape from western diet they need to stop eating western food daily. Malcolm Gladwell’s article “The Trouble with Fries” is about a very invasive topic. Fast Food is killing us. Can it be fixed? Although his thesis statement isn’t exactly clear, he effectively uses evidence to convince his audience that a nutrition movement is needed especially for fast food. By discussing many factors with supporting evidence that is factual he shows why fast food is struggling to have a nutrition movement.
Thinking about the importance and significance of food respective to our health, ethnic culture and society can cause cavernous, profound, and even questionable thoughts such as: “Is food taken for granted?”, “Is specialty foods just a fad or a change in lifestyle?”, and even “Is food becoming the enemy.” Mark Bittman, an established food journalist, wrote an article called “Why take food seriously?” In this article, Bittman enlightens the reader with a brief history lesson of America’s appreciation of food over the past decades. This history lesson leads to where the social standing of food is today and how it is affecting not only the people of America, but also the rest of the world.
While nutritionism is suppose to scientifically guide us to eat healthy, Pollan points out that there is no scientific evidence to back it. Instead, he provides research conducted by Harvard nutrition scientist that proves the opposite. "In the public's mind [...] words like 'low-fat' and 'fat-free' have been synonymous with heart health. It is now increasingly recognized that low-fat campaign has been based on little scientific evidence and may have caused unintended health consequences." (Pollan 43). In Based off these observations, Pollan uses inductive reasoning to draw the conclusion that nutritionism is more harmful then helpful.
In Michael Pollan’s essay “Escape from the Western Diet,” he informs Americans about the western diet and believes they need to escape from it. The reason Americans should escape the western diet is to avoid the harmful effects associated with it such as “western diseases” (Pollan, 434). To support his view on the issue, Pollan describes factors of the western diet that dictate what Americans believe they should eat. These factors include scientists with their theories of nutritionism, the food industry supporting the theories by making products, and the health industry making medication to support those same theories. He probes them to learn the what, where, and how of dinner – knowing what is going into the body, knowing where that food came from, and knowing how that food was made. By first knowing what is being consumed, people can make better informed decisions about their purchases. Nutrition, or lack thereof, is a key component in the battle against obesity. Food giants are hoping to hide the often unnecessary filler present in their products by use of dodgy claims and socially engineered advertisements. In general, most consumers probably couldn’t say where their food came from. This usually boils down to the fact that shoppers typically don’t think about it. Breaking this reliance on mass-grown foods is the second part of Pollan’s proposition. The third and equally important element is how the food is produced. More specifically, Pollan is concerned whether or not the food has been produced in a sustainable manner. Preserving the biodiversity of food, maintaining fertile land for future generations, and ensuring consumers receive food that does not compromise health are all factors of sustainability. Without informed consumers, what, where, and how will continue to be unanswered questions. Michael Pollan's In Defense of Food: An Eater's Manifesto is an eye-opening analysis of the American food industry and the fear driven relationship many of us have with food. He talks in depth about all the little scientific studies, misconceptions and confusions that have gathered over the past fifty years. In the end provide us with a piece of advice that should be obvious but somehow is not, "Eat food. Not too much. Mostly plants." He follows the history of nutritionism and the industrialization of food, in hopes to answer one question….. how and when "mom" ceded control of our food choices to nutritionists, food marketers and the government.
As a culture and as individuals, we no longer seem to know what we should and should not eat. When the old guides of culture and national cuisine and our mothers’ advice no longer seem to operate, the omnivore’s dilemma returns and you find yourself where we do today—utterly bewildered and conflicted about one of the most basic questions of human life: What should I eat? We’re buffeted by contradictory dietary advice: cut down on fats one decade, cut down on carbs the next. Every day’s newspaper brings news of another ideal diet, wonder-nutrient, or poison in the food chain. Hydrogenated vegetable oils go from being the modern alternatives to butter to a public health threat, just like that. Food marketers bombard us with messages that this or that food is “heart healthy” or is “part of a nutritious meal”. Without a stable culture of food to guide us, the omnivore’s dilemma has returned with a vengeance. We listen to scientists, to government guidelines, to package labels—to anything but our common sense and traditions. The most pleasurable of activities—eating—has become heavy with anxiety. The irony is, the more we worry about what we eat, the less healthy and fatter we seem to become.
There are more ways to shun obesity. Michael Pollan, who wrote “Escape from the western diet”, claims that the fast food industry is one of the main reasons why people struggle with their health. He believes that the processed food we consume gives us harmful deceases. Pollan urges us to listen to his words to avoid the western diet, he preaches that we should start eating healthier and to put more time and effort when it comes to buying food. Pollan provides us with his rules as well and claims that it will help us plot our way out of the western diet. Also, Pollan informs us that when it to the intake we tend to over eat, thus it becomes a huge threat to our health. The government has also made an attempt to put a stop to obesity by inverting an array of food options. By focusing on the main causes of obesity, Pollan overlooks the deeper problem of the lack of insufficient information, thus he leaves us with a lot of question marks .

An epidemic of food like substances taking over the supermarket shelves; an epidemic that has substituted real food for fake, shown links to obesity, and has altered our eating habits. There is, however, a solution that allows you to stick to the healthy foods you want to eat and avoid the foods you don’t.
In the early years of civilization, ancient empires were rising and falling. As one empire would rise to power, others would fall and crumble. The Inca empire rose to power in 1200 AD, but only held power until 1532 AD. Even as powerful as an empire the Incas were, they too had a rapid decline in power. Ancient civilization empires are not the only kind of empires that rise and fall. Michael Pollan in “Nutritionism Defined” conveys a message to his readers that nutrient empires are rising up to be the top nutrient and then falling as another new leading nutrient emerges.
Over the last several decades, the diet of society has been continually changing. This has resulted in different formulas for nutrition and the proper portions of foods that must be consumed. To fully understand the various arguments requires looking at numerous viewpoints. This will be accomplished by focusing on Michael Pollan's Escape from the Western Diet in contrast with Mary Maxfield's Food as thought: Resisting the Moralization of Eating. These views will highlight how diet and nutrition is based upon individual opinions. This is the focus of the thesis.
American food culture is not like other countries in the world; the diversity in foods and ethnicity creates its uniqueness. However, Americans mindset of “what should we have for dinner” and the poor decision making about food choices created the “omnivore’s dilemma” or what Pollan, in The Omnivore’s Dilemma calls the American national eating disorder. Michael Pollan in his book titled ‘The Omnivore’s Dilemma’ takes a critical look at the food culture in the Unites States. According to him, the question that seems to bother most Americans is simply ‘What should we have for dinner today?’ To Pollan, Americans face this dilemma because they do not have a proper tradition surrounding food. ‘The lack of a steadying culture of food leaves us especially vulnerable to the blandishments of the food scientist and the marketer for whom the omnivore’s dilemma is not so much a dilemma as an opportunity; (Pollan). Going to the grocery store when I am hungry has always been a disastrous idea. Usually after those kinds of trips, I come out with too much food. Those foods claim that they are healthy; low in fat, low in sugar, high in protein, and they have all the vitamins that I need to replenish my body after a hard workout. Thus, I usually don’t feel too guilty about eating them, and I tell myself those snacks are healthier than eating at the dining hall. However, I now realize that I have fallen into the trap of buying and consuming the “foodlike substitutes” of which Michael Pollan talks about in his essay “Eat Food: Food Defined” (9).
