Performance Measures
As the sections we divided in Supply Chain Design paper, we have five different sections of a restaurant. They are Suppliers, Inputs, Processes, Outputs and Customers. Now we will find out two different measurements for each section.
Suppliers is the provider of inputs, so the measures of these two are always related with each other. For example, we always use quality of the inputs, price, delivery reliability, and service measurements. In this suppliers and inputs part, we are hard to see as a customer. It is based on our recommendations.
For the quality of food, it is directly related to the taste of the good. They must treat it seriously. In other words, it should be fresh. As price, like we discussed above, it can’t be too expensive because they have to keep they cost low. For the service of the supply, I don’t think the suppliers of Little Sheep will provide. If the restaurant want to limit their cost, they may purchase by themselves. For delivery reliability, we get some point when we order, because when we see the menu, the whole section of grill and some vegetables are removed manually. It is because Little Sheep can get the necessary ingredients they need for those plates. So their supplier are not always reliable.
For the processes measurements, we will pick up flow time and delivery variability. The flow time is the time between a customer express their needs and the customer pays the bill. Hotpot doesn’t perform like other restaurant. The

To this end the main objective of this research is to know the general performance stands of this restaurant with keen concern on the numerous variables that revolves around the profitability of the restaurant. The most important purpose of the study is to explicitly understand the general perception of the performance of the Remington’s restaurant, to put to light the real gist of understanding the research methodology that has been used by Remington’s restaurant, and lastly to know the overall satisfaction that various customers derive from the experience they get from this restaurant. The research study therefore focuses on the four distinct sets of variables: the research selection criteria, the invaluable perception on the performance criteria, the demographic indicators on the host and lastly, the invariable satisfaction criteria.

In order to understand the goal we must know that the supply chain is the process the raw materials of a product go through in order to be available to the consumer. A review of literature related to supply chain network design area specified in allocation and distribution problem under risks is presented in this section. There has been a growing interest in supply chain network design criteria which has draw great attention of a number of researchers to propose advanced models and develop efficient methods. Traditionally, procurement, manufacturing, distribution and planning processes are studied individually, however, with risk management in demand and supply side taken into further consideration, there has been an increasing attention placed on the integration of each process as a network design problem. To go through literature related to supply chain network design model under conditions of uncertainty, a search of references through library’s database is conducted by using criteria key words, which are “supply chain network”, “distribution-allocation”, “risk management ”, ”uncertainty”, ”stochastic demand” and ”supplier disruption”. Reference in appropriate mathematical programming methods and algorithms possibly used to solve problems in this criteria is also big part of this literature review. Large body of references shows that mixed-integer programming (MIP) models are commonly used in supply chain network design under conditions of uncertainty. At below, I review the literature mainly in separate but complementary parts.
