Explain how protein molecules may denature
Proteins are the most abundant organic molecules of the biological system. They are complex organic nitrogenous compounds made up of carbon, oxygen, hydrogen, nitrogen and sulphur. Some proteins also contain phosphorus, iron, copper in varying proportions. Proteins can be defined as complex organic nitrogenous compounds whose building blocks are amino acids.
Amino acids are micromolecules and as the name indicates, every amino acid has a basic amino group and an acidic carboxyl group. Hence, they can act either as weak acid or as a weak base. Such substances are called amphoteric substances. Only 22 amino acids occur in proteins and these 22 amino acids are called standard or primary amino acids.
