The optimal temperature for a particular enzyme is the temperature at which the enzyme attains highest activity. When the temperature is increased then the rate of the reaction is faster but too high temperature can result in denaturation of enzyme (as enzymes are protein). If the temperature is low then the rate of reaction is also low which is also not desirable. Hence, there is a need to determine the temperature at which the enzyme are highly active.
