He reason for this is simple. For 99.9% of human existence, our species lived on foods that were either raw or minimally processed. This book goes into great detail of how food changed over the years and how the impact of the industrialization of our food has poisoned our way of eating. Pollan mentions that the food our ancestors ate back in the days were all real food and now the vast majority of them are all refined, processed, or canned.
