Uncle Nam, a 68-year-old nutritionist that is happily married with 3 successful children, defies the stereotypical belief that older adults often lead dull and lonely lives. Sitting in his cozy living room on a Thursday evening, my uncle was dressed in khaki pants and a button-down shirt with his mixture of black and grey hair neatly combed back. He adjusted his eyeglasses up higher on the bridge of his nose and gave me his full attention. Born in Vietnam in 1949, he began working in a printing shop at an early age, attended some college, and served as a nursing aide in the army in his 20s. Faced with oppression of the communist government, he made up his mind to escape the unjust country by risking it all to immigrate to the U.S. with his newlywed wife. From then on, he has worked many jobs from waiting on tables to educating clients from diverse backgrounds on healthy eating habits and lifestyles. Impressed by the snippets of my uncle’s life that I have heard from other relatives, I decided that he has a valuable perceptive that is worth discovering and sharing.

As I see in slums such as Annawadi I saw many opportunity for them to succeed such as Abdul family was doing pretty okay as a trash recycler until the family was accused in killing Fatima in the fire. Diverse groups in American society are often the most marginalized and therefore the most vulnerable to issues that undermine the fair and uncomplicated pursuit of health and wellbeing. One of those issues is the lack of access to affordable healthy food and, in many cases, the inaccessibility to food in general. Areas where affordable and healthy foods are largely unavailable are called food deserts and the members of the diverse groups that live in such areas or that have access to very little food at all often develop a sense of food insecurity. One of the groups that is increasingly impacted by food deserts and food insecurity is the nation’s elderly population which is, by most standards, defined as those individuals aged 65 and older. The following paper investigates this phenomenon by addressing the elderly population of Ada County, Idaho as representative of this diverse and often disenfranchised population. The paper investigates the issue of food deserts and food insecurity that threaten the health and wellbeing of the elderly in the context of the various elements of social determinants of health that contribute to their development and persistence. The paper also includes proposals for individual and population-based strategies to improve access to healthy and affordable food by this population as well as improve the health and wellbeing of its members.

The first family interviewed consists of a husband, wife, and two elementary aged daughters who came to the U.S. from Nigeria five years ago. The marriage was arranged between the husband’s father and siblings and the wife’s parents. Because of the great sense of community in this culture, the residents of the couple’s two villages also had to agree to the marriage. It was clear to this author that family and community relationships are highly valued in this family, and great emphasis is placed on valuing the opinions of, and deferring to elders. In Nigeria, health maintenance or protection is not highly considered, yet the residents of the villages generally have excellent health with very few incidents of the chronic diseases we face in the U.S. The reason for this relates to the physical activity involved in daily life, such as walking great distances, and manual labor working in the fields. Another reason for the health of the community is the diet they eat. Each family grows fresh vegetables and fruits. Beans are a primary source of protein, and meat is a special treat that is consumed only a few times per year. Processed or sugary foods are not a part of the diet.
