High-fructose corn syrup (HFCS) is a sweetener composed of corn starch. The starch is broken down into glucose by enzymes, corn syrup is prepared by glucose isomerase in order to convert some of its glucose into fructose also called fruit sugar. It is often compared to granulated sugar, but the most common form of HFCS contains either 42% or 55% fruit sugar and is referred to as HFCS 42 and HFCS 55, the rest of HFCS being glucose and water.
