Step 1- Introduction

FOOD PRESERVATION:-

This is done to prevent spoilage and decay at various levels so that food is available in surplus amount and in a healthy way too.

Mostly contamination comes from external sources during bleeding, handling, and at the time of processing. The contaminating bacteria on the food will soon be carried by blood and lymph, this is how infection circulates. During handling the contamination may come from carts, boxes, and other containers, and from the air.

 

Step 2- Explanation

Most crops are harvested only once a year. Thus, they are available in plenty amount during a selective time. For getting seasonal foods regularly throughout the year, they should be preserved in the best possible way.

The preservation at the time of storage is done at three levels:-

1) At producer- farmer level.

2) At trader's level- Here food is preserved in gunny bags

3) At the FCI level in huge silos.
