A HACCP plan is in place and was reviewed during the time of the audit. The HACCP plan was last updated 20 September 2014 and validated on 28 October 2014. Last review was on 11 May 2015. The HACCP team is composed of Robert Perini (President, CPO), John Walsh (President, CPO, QA), Julie Molina (VP of DMW Operations), Sarah Kinnunen (VP of DMCW Operations), Billy Rommal (Assistant Plant Manager), Heberto Garcia (Assistant Plant Manager) and Teron Gray (Assistant Plant Manager). Previously the company identified three Critical Control Points (CCPs) by performing hazard analysis; however, after the most recent visit by NSF and In Accordance With (IAW) IBWA standards, only one CCP is now currently identified. The other two are now considered control points or quality control points, which are still monitored. CCP 1: Ozonation/Recirculation Loop Critical Limit (CL): Ozone must remain above 0.10 ppm. Finished water is continuously tested using direct read ozone sensors. Measurements are recorded at start-up, shut-down and every two (2) hours during production. Corrective Action (CA): If the direct ozone reading drops below 0.10 ppm during the day, an audible alarm will sound and all bottling operations will immediately cease until the problem can be isolated, solved and further monitoring indicates that the ozone level has returned to the minimum of 0.10 ppm. .
