The subject I interviewed is a 51 year old Black male from Jamaica that is 5’10 and weigh 165 pounds. The subject is currently a military officer and travels over half of the month to various countries. The subject had a good knowledge of nutrient due to completion of a Food Science degree which several class in nutrient as part of the Food Science degree curriculum. The subject had a working knowledge of fortified foods and was able to name several. He said that the most common foods on his fortified food list is milk with vitamin A & D and cereal such as post whole grain cereal. He name foods high in vitamin A such as leafy greens, vitamin D such as fish, vitamin E he name various nuts, vitamim K again he said leafy greens and B 12 he just said meats in general or animal products. When ask do he take any type of supplements the subject responded yes that he take supplement do to aging and meal limitation due to his travel to various countries. He stated that he uses the daily meal plan from MyPlate and that he tries to sustain his weight and eats 2200 calories a day when he travels and 2400-2600 when he is not traveling due to his ability to exercise more doing those weeks. The subject have a good understanding of serving size from his nutrition classes and he has a MyPlate account as well as Health Military account that send suggested meals and exercises based on his profile. The subject like his vegetable steamed and said he steam his vegetables between 10-30 minutes according on the vegetable. I did not ask for examples of the different vegetables and the time his should be steamed. Two-hundred overweight/obese individuals will be subjected to my evaluation plan. For my goals I chose to drink at least eight glasses of water a day, to stop eating after eight, and to exercise 30-60 minutes a day. I chose these goals because they are probably the ones I struggle with the most. I am over all really good with keeping up with all of these but I wanted to test myself as well.
When I first began college I was unsure of what career I wanted to pursue, but I knew whatever I chose would lead me to a challenging and rewarding career. My first semester at California State University, Fresno (CSU, Fresno) I enrolled as a biology major because of my interest in science, but I also happened to be taking a nutrition class as a part of my general education. As the semester progressed my interest in nutrition grew, while the feelings of uncertainty I had about my future career began to dissolve. I was drawn to the field of dietetics once I began learning about the effect that food has on the human body, and realized I could educate others on how to combat diseases such as cancer and cardiovascular disease.
As I analyze and compare my consumption to those recommended, my diet is not as healthy as it could be. I enjoy to snack, unhealthily, and eat foods that are convenient for my lifestyle rather than my health. I only received 57% of my calcium recommendations, 27% of potassium, 77% of copper, 67% of iron, 49% of magnesium, 75% of phosphorus, 78% of zinc, 49% of vitamin A, 92% of vitamin B6, 20% of vitamin C, 13% of vitamin D, 20% of vitamin E, 32% of vitamin K, 92% of folate, and 44% of choline; so in those areas, I lacked to meet adequate needs. Selenium, sodium, vitamin B12, thiamin, riboflavin, and niacin, I consumed sufficient amounts or more than what I needed.
I have been consumed with the difficult decision prior to the start of this semester between my choice of majors and have unfortunately come to the incorrect conclusion. After attending class, interacting with peers in my classes it has become apparent that changing my major to Nutrition and Dietetics from apparel is clearly more suited for my career path. It’s been a stressful journey figuring out my future plans. I’ve spent the last couple years toying with different ideas of where I might be later in life. I decided I wanted to study nutrition my junior year of high school. I watched the documentary Forks over Knives and realized if I don’t change my lifestyle and eating habits now, then when would I? I began watching what I put into my body. I first cut out soft drinks and fast food. Then I slowly cut out meat products. It wasn’t long before I noticed a difference in my energy levels and weight loss. In the past few weeks, I have attempted to exercise at least 5 times a week, challenge myself by eating more fruits and veggies, drinking more water, eating more superfoods, and getting at least 8 hours of sleep at night. I also worked on overall improving my own wellness with more meditation, winding down at night before sleeping, and dumping the processed, unhealthy foods. At the beginning, I thought this would be simple, but as days passed, I soon realized how unhealthy my usual lifestyle is and how much better I was feeling focusing more on my health. From running a mile around the neighborhood to sleeping more at night, I saw an improvement physically and mentally.
