The way Indian cuisine distinguishes itself from all the cuisines of the world is with its use of spices. Spices used in Indian cuisine are of the utmost importance in markets all over the world and are even traded in international markets. Indian chefs usually use twenty five different spices in order to create their dishes. Chefs use combinations of different spices to create different tastes of curry, one example of this is the combination of cloves, cinnamon and peppercorns to produce garam masala. Popular spices include saffron and turmeric which are used as a food colouring in dishes which are desired to have a yellow colour. The chef would start by frying onion, ginger, garlic and spices at a very high temperature. Meats and other ingredients such as vegetables, spices, yoghurt would then be added and the dish would be simmered at a low heat until the ingredients are cooked through. At the end of making the dish some leafy vegetables would usually be added and flavourings such as lemon would also be added if desired. The way Indian cuisine is prepared may be linked with the traditional way Indian's would cook, this involved the use of cow droppings shaped into patties and used like charcoal under a pan. The biggest festival in India is the Diwali. The Diwali occurs in October or November. Like Easter for Christians the Duwali differs from years to year, it is decided when the Diwali is held by the lunar calendar. The Diwali traditions differ from region to region and are also determined by your religious beliefs however a few traditions are shared between all the different groups residing in India, these include: Debts being paid off, homes being cleaned, new clothes being made or bought and an elaborate meal being consumed. During festive meals the Indian Mughal heritage takes over as they saw eating as an art form and a source of pleasure. the chefs of India therefore prepare food that delighted the people with its appearance, taste and smell. Because there are many vegetarians in India and a lot of the traditional Mughal dishes used meat, the vegetarians would incorporate the spices and nuts that the Mughals popularised in India. Cakes and other Sweet dishes are also consumed during festive periods. These cakes and sweets use ingredients such as chickpea flour, white cheese, rose water, sugar and almonds. During the start of spring the people would splash each other with coloured water and smear one another with coloured powders, they would also consume Bhang, a yoghurt based drink.
