B) Unsaturated fats have a high melting point, due to the straight structure, but saturated fats make a straight structure, they are much more stable than unsaturated fats. Saturated fats are also solid at room temperature, yet the cell membrane has to be fluid to let substances through the membrane. If all phospholipids in the cell membrane were to turn into saturated fats, they would turn completely solid not allowing anything through. In colder climates plants need to have a higher amount of unsaturated fats to keep the cell membrane from freezing solid.
