Celeriac, or celery root, is a very frightening, intimidating vegetable. It is larger than a potato, and resembles a rock or a dirt clod at first glance. Most people just walk on by it in the supermarket. But despite the bad reputation, celeriac is actually a very delicious root vegetable which has a refreshing taste similar to a combination of celery, parsley, and apple. I have assorted sizes of cast iron skillets, most of which are over 30 years old and I use at least one on a daily basis for preparing meals. Traditional cast iron skillets flavor foods in a way that no other cookware can, it's a unique flavor that enhances your favorite recipes, and the older the cast iron skillet is, the better. Cast iron skillets heat evenly so you don't have 'hot spots' in your skillet when frying that tend to burn some portions while other portions are barely cooking. They are great for fall family favorites, they ease up the load on my stove when cooking for a party, and they keep me from having to heat up my kitchen in the summer. Best of all, they are super easy to use, even for beginners, and the mess is totally contained (making cleanup easy, particularly if you have the type of crock pot with a removable liner). There are a few basic rules any crock pot chef should know, and then you can be off and slow cooking like a pro. First and foremost, for food safety reasons, it's important to cook your meat on high for an hour before lowering the temperature. The meat needs to reach 140 degrees as quickly as possible.
