Dairy foods were not popular until the middle ages when the story of Judith emerged. Judith was a beautiful woman who saved her village from the Babylonians when their army was besieging the village. Judith took it upon herself and bravely charmed her way into the enemy camp with a basket of wine and cheese which she presented to the General. He ate and because the salty cheese made him thirsty he drank more wine which was what Judith had hoped for. Once drunk Judith beheaded the General and returned to her village with his head in a basket. The Babylonians then left and so it became traditional from then onwards to eat dairy in honour of her bravery.

For deserts they make use of honey, nuts and filo pastry.

It is a traditional meat as not only is it tasty but it is cheap and as most families from eastern Europe as well as Jewish families living in America were generally poor and therefore like most poorer communities they could not afford the more tender cuts of meat.. Brisket could not only be slow cooked but absorbed flavour really well, and by adding red wine, onions, spices and carrots, the result was a tasty tender meat that could feed the family well.

One of my favorite dishes is the roasted pork or like my Cuban family call it “lechon asado”. The roasted pork can be prepared in different ways, people of different cultures have their way of cooking it. My family is from Cuba and here in Miami it is a tradition to eat roasted pork for Christmas or like my grandmother call it “Noche Buena”.
