One of my favorite dishes is the roasted pork or like my Cuban family call it “lechon asado”. The roasted pork can be prepared in different ways, people of different cultures have their way of cooking it. My family is from Cuba and here in Miami it is a tradition to eat roasted pork for Christmas or like my grandmother call it “Noche Buena”. This tradition is not only for Cubans, people from other countries and cultures who live here in Miami also eat pork and depending on their culture, they have a different way of cooking it.

As the economy continues to flourish, the increase in affluence allows the people to eat out more frequently than having a home cooked meal. Unfortunately, this has become a growing concern for health-related risks associated to high-fat content diets resulting from the increased consumption of meat and processed foods. Nevertheless, there are certain religious practices that influence what kind of dishes one maybe allowed to eat. For example, Muslims are forbidden to eat pork which is a favorite of the Chinese population; Hindus do not eat beef; Buddhist are vegetarian. Braised Pork (“Hong Shao Rou”) is one of the most popular dishes from China, cooked using pork belly and a combination of spring onions, ginger, dry red chili, sugar, soy sauce, rice wine.Using cornstarch and sugar to thicken the sauce, which is sweet and fairly sticky. Also, using star anise and a bay leaf to enrich the flavor. Braised pork belly easily melts in the mouth.
To introduce this product to Mexico, the intention will be to craft meals that are traditional Mexican cuisine and reasonably low in cost. It will be important to use ingredients from local farmers to develop relationships within the country and to provide the service and product at the best price to build a customer base. This product seemed logical for the Mexican market when observing family eating tendencies in the culture. As a collectivist culture, Mexican families are likely to have meals together and cook at home. Eating brings people closer together everyday, and for everyone, there are important memories that have been created because of food. Whether it’s a formal dinner, or an informal picnic, there will always be special bonds between people because food was involved. We need to have traditions with food because they form and strengthen the bonds between us.
The focus of this assignment is on the geography of chicken soup. For purposes of this particular assignment, the “claimed” country of origin in Cuba. The reason the term “claimed” is used is due to the fact that this particular dish may be believed to have originated in many other countries as well. As such, the recipe, and more specifically the ingredients used, will most likely differ based upon the country and region that it is originated from. With regard to the Cuban version of chicken soup, the same is comprised of thirteen (13) ingredients, to wit: olive (oil); onion (red and green); cilantro; cumin (ground); wheat (flour); chicken (stock and thigh); cassava; calabash; potato (red); plantain; lemon (juice); salt; and, pepper. Notwithstanding the fact that these ingredients are customarily used to make the Cuban version of chicken soup, these same ingredients were not all domesticated in the region that Cuba is located in.

Food brings everyone together no matter what culture you are in. Culture is a way of life shared by a group of people, beliefs, customs, symbols and etc. Many families can spend time with each other by preparing and eating dinner at the table, going out for dinner or just celebrating holidays.
