On YouTube this scenario is totally different, there you only get the feedback after you made the video and responding to it is usually very hard if you are big, it can also prove very destructive, because while on twitch you can defend yourself while people are judging you, on YouTube you can only comment after the damage is done. It is true that when making content on YouTube or on twitch you might not want a great interaction with your viewers and YouTube tends to be better in that sense, but it is only a minority that don't like to interact with
