A health risk that is associated with too much saturated fat is atherosclerosis (Smolin et al., 2015). Consuming too much saturated fat causes the lipoproteins that contain cholesterol to increase in production in the liver (Smolin et al., 2015). This results in the reduction of receptors on LDL cholesterol so it decreases the amount of cholesterol that is removed from the blood (Smolin et al., 2015). This increases the risk of atherosclerosis because once oxidized LDL cholesterol is present in the artery it promotes the inflammation in that area (Smolin et al., 2015). This results in white blood cells sticking to the lining of the artery and mature into macrophages (Smolin et al., 2015). The presence of scavenger receptors on these macrophages increases the uptake of LDL cholesterol which become foam cells (Smolin et al., 2015).
