I hear the word sustainability almost every day, what does it mean? Is it about people, our environment, or jobs and money? Sustainability is about all of these things and more. Sustainability could be defined as an ability or capacity to reduce the foot print, reuse resources of something without jeopardizing the quality of what you are trying to accomplish. We all have been at food establishment from fast food, take out to table cloth dining. And many times we scratch our head and wonder if they know what they are doing, from why is my food taking forever to I do not need to ask for my water to be refilled three times, and we all say to ourselves, I can run this place better than this.

I ordered a chicken salad and I told the server to hold the onions and mushroom and add dried cranberries. The order makes it to the chef, is that mean the chef will look at it and determine that the items do not match what is listed on the menu, so he will have to ask the server if that is what I ordered. Wonder how many places actually have the time to do that? Servers could be notified when the food is ready and placed on the shelf for pick up, TGIF for example in some of their locations they have tablets on each table so this way you can order at your leisure and will reduce the percentage of errors in ordering. If you think about it that will take some of the pressure of the restaurant for having people complain when they are waiting for the server to arrive at the table and take the order. Which Wich restaurants have their menu printed on a paper bag with all the options that they offer, you complete the order and hand it over to the person at the register, the beauty about this is that timing starts from the minute you pay for the order not when you arrive. This way if you can’t make up your mind you are not taking the server’s time while they are waiting for
The third issue was the process of the servers running the food. Since they are shorthanded on servers, the scheduled servers help each other out by delivering each other’s food which in turn takes away time away from their own guests.
Then they will prepare the food ready to cook it and will store the prepared ingredients safely at the correct temperature. They will then wait for the person at the end of the chain – the consumer – to come to the restaurant to cook it for them. This is good for the producer because money will track back to them through the restaurant gaining the money from selling the meals. The money goes into the restaurant from customers pockets, and then the restaurant will use a portion of this money to re-purchase some supplies from the producer. This is when a good working relationship will develop between them as they will gain more sales and earn more money back.
Sustainability relates to the ongoing capacity of Earth to maintain all life, which means developing ways to ensure that all resources on Earth are used and managed responsibly so they can be maintained for future generations.
Every time guests enter your restaurant, they should experience the same food quality and service. Managing a customer’s expectations is an essantial part of running a restaurant and consistently providing the same quality product ultimately can determine the success or failure of your restaurant. Sustainability is a concern, which has only been arising from the impact we humans have done in the past couple of decades. The word sustainability means how long you can continue doing what you are doing without coming to an end (Sustainability 2015).
The way we used to service our customers was creating far too many mistakes and frustration. We intend to bring harmony back to our restaurants by allowing the customers to input their own orders into our new system. By placing the responsibility in the customer’s hands, our employees will be able to focus more on the preparation of the food. This will alleviate many of the errors currently being made which in turn will bring down the stress level within the work environment. We are preparing for there to be a learning curve and possibly some confusion. A training program is already being created. This program will allow our employees to ease into the new system without a huge transitional period.
Observing from a distance the restaurant seem to operate with about 1 servers depending on number of customers in the system. It took about 1 minute ordering and about 4 minutes for time in system. Depending on the groups of customer coming inside the restaurant. There seem to be more customers entering the system from the back entrance then the main entrance. As rush hour approach at about 11:50 AM the servers seem to expand to servers. Once customer approach the servers in groups of two it took about 1 minute in the system depending on the type of meal. For the food to be process it took about 11 minute for customers to receive their meals. Groups of one seem to take about 2 minutes and 54 second to order their meals. Processing the food took about 9 minutes depending on the type of meal being process. During rush hours the workers perform their job well when preparing the meal their tend to be more focus on the drive thru minimal toward customer inside. Depending on the day rush hour would start earlier and the time in the system seem to be longer when customers order their
Sustainability to me is a way in which something is conserved in order for others to have an experience with it as well. The definition for sustainability in a dictionary is the ability to continue a defined behavior indefinitely. I was raised respecting the environment around me and how to treat it correctly. I recently visited Memorial Park in Loma Mar, California. I love nature and being in it was great, but, there was something odd about my visit. As I approached a tree I have passed hundreds of times I saw and orange rope around it meaning to stay away from that tree. The tree seemed burned a bit and was surrounded by plastic bottles. The air was fresh but the only thing my nose picked up was of the burning coal on the grills. I felt cool air come past me and once again
From the observations of the restaurant and the interview with a full-time employee, it was evident that the queueing problem was typical, especially for ‘Today’s special Hot-food menu’ during the peak hours of Fridays between 12:00-14:00. This queueing problem affected the total time taken to be fully served, taking up to 7.7 minutes, which the problem was analysed in the group report.
Walking up to the restaurant, you are greeted by two hosts that hold open the door for you. It is a highly welcoming aspect. The host at the podium is always remarkably generous to the guests and gets you checked in for your reservation right away. Although you may not be seated right away as a result of how packed they usually are, the dramatic yet intimate atmosphere is certainly pleasing on the eyes to glance around at. When guests are seated, they are greeted by their server, almost immediately, handing over an exquisite wine list, and asking for the drink order. The servers are extremely knowledgeable about every detail on the drink and food menu, which helps carry out the ordering process much easier. The servers are all extremely friendly, and they work hard to satisfy their guests while they are dining with them. Always with a smile on their face, the servers all have an admirable attitude. It is an exceptional quality that the servers work as a team being that whenever a table’s food is ready, an available server brings the food to the table so that it is as fresh as possible. The server will check on you multiple times to see how everything is, and to ask if you need anything. Not only that, but a floor manager will come around to check on all of the guests. If someone is dissatisfied, the manager helps assist the customer until they are pleased with their
They expect me to be patient, clear with orders, not demanding, and aware of what is going on. I must know what food they just told me was done and where to take it, but first I need to pay attention to hear when my name is called. There is usually more tension between the kitchen and waiters than there is with any other workers. The roles are so different. The kitchen staff usually looks at servers as just wanting to get a good tip, and that we do not care the extremities the kitchen has to go to for us. It is important that servers respect the kitchen staff; they are in charge of the food we will be serving. “Servers, as mediators, need their food when their customers demand it: sometimes this is before the food is ready; at other times after. If servers demand food too early, cooks are stressed; but if they don’t pick up the food on time, the food is poor and the cook seems incompetent.” (Fine 105). This is the most true on Friday and Saturday nights. Everything seems to be more chaotic on these nights, since most people decide to go out. This is good because it brings in more business for the restaurant, but then there are always more unhappy customers on these nights as well. Overall, positive interaction with the kitchen staff can make amazing things happen.
