Steps in a Foodborne Outbreak Inves4ga4on 1. Has there been a foodborne outbreak? Yes 2. Establish a case defini;on. Which persons will be defined as having the disease as part of the outbreak? Individuals that aPended faculty mee;ng Tuesday at Ann Morrison Park who ate some of the food at the cookout and exhibi;ng symptoms such as diarrhea, fever, chills, and abdominal pain. 3. Generate a hypothesis. What foods are on the list of suspects? Foods that may have caused foodnorne illness include hamburgers, green bean casserole, and potato salad. Another hypothesis I had was the use of untreated water to wash the grill, hands, and the spoon everyone was using. 4. Test your hypothesis. Complete and analyze your data table. Which food was eaten or in contact with foods eaten by the ill or deceased persons? The food that had the most ill effect was the hamburger. 5. Find the point of contamina;on. How do you think the food iden;fied in #4 was contaminated?
Based on when the hamburger was purchased to when it was cooked, it was le[ out unrefrigerated for many hours. 6. Control/end the outbreak. Is the outbreak over? Are there any further ac;ons that need to be done to prevent further illness or death? The outbreak would be over if the hamburger was the culprit but if the was from the water plant is the issue, it would need to be treated in order to stop the outbreak. To prevent further illness or death, one would have to make sure to be careful with leaving raw meat in the open unrefrigerated air. 7. Iden;fy three strategies to prevent future occurrences of this foodborne illness. Educa;on would help prevent something like this, having flyers at park bulle;n boards, and of course proper food handling like washing hands/separa;ng foods/ and keeping foods at proper temperatures.
