Heating Method Table 3. % Fat in meat (heating) (3 points) Method-1 Method-2 Mass of meat 21g 20g Mass of small cup 2g 2g Mass of cup + fat 23g 19g Mass of cooked, drained meat 19g 18g Mass of fat 8g 8g % Fat in meat 38% 38% Note: For all calculations show your work to be able to earn full points. QUESTIONS 1. Create a comparison table for the % fat from the labels and your results. Explain the discrepancies from the label percentages of fat and your results. (3 points) % fat from lables % fat-results 1
30% 35% 15% 15% 10% 10% 2. What is fat? (Give as much information as you know-definition, formula etc.) Refer to the lipids chapter and power point lectures. (2 points) Fat is a lipid that has glycerol, fatty acids, or triglycerides. Saturated, monounsaturated, and polyunsaturated fats are all types of fats that are found in food. Fat is an important macronutrient for humans. 3. What is the difference between grease, fat, and oil? (2 points) Grease is solid once it has been cooked and cooled but it is liquid when it is hot. Fat mainly comes from animal products and it is solid at room temperature such as butter, cheese, and fat trimmings from meat. Oil comes from plant products and it is liquid at room temperature. 4. Why does fat float on water? (1 point) Fat floats on water because it is less dense than water. 5. Using your data from Sample 2 (% fat) , calculate the number of grams of fat in 3.50 lbs. of ground beef? Use dimensional analysis; show your work to be able to earn full points. (1 lbs.= 453.6 grams) (3 points) 3.50 lbs. * 453.6 grams/1 lbs. = X grams X = 1587.6 grams 6. How much fat should we consume a day? (2 points) We should consume20% to 30% of our calories coming from fats. 7. Copy 3 pictures from boiling method here. (3 points) 2
