I liked how Daria explained that she started school when she was 26 years old because unfortunately she got pregnant when she was too young. Sometimes in life we have unexpected problems or barriers that we need to find a way to move forward from there. She found a way to handle school and her kid at the same time. My short-term goals are to enhance my knowledge of medical nutrition therapy, to gain experiences in all aspects of the dietetic field especially in clinical nutrition setting, and to become an RD. My long-term career goals are to become Certified Diabetes Educator, to engage and serve in community nutrition, and to promote wellness and preventive health care for socio-economically and culturally fragile populations. The U.S. population has become increasingly diverse in ethnicities and cultural backgrounds. Therefore, I believe that providing patient-centered education with respect on the differences of cultural, religious, and dietary practices are the keys to becoming a successful educator in nutrition counseling and education.

These health care teams often are made up of many different types of professionals including doctors, physician assistants, nurses, pharmacists, dentists, therapists, registered dietitians (RD), and many other different types of technologists and technicians. Although all of these members of the team are essential, the role registered dietitian’s play and the knowledge they contribute is vital to many different specialties in health care. According to a study by Kelly Adams, Karen Lindell, Martin Kolhmeier, and Steven Zeisel, only 30% of medical schools require an actual separate course in nutrition. Although their curriculum may include nutrition throughout the many different courses a physician has to take, this is an inadequate amount of time being spent on nutrition to be considered and expert in this field, which results in the vitality of having and maintaining a RD on their team. Nutrition can prevent and help treat many different problems that arise in clinical care and the different specialties that it entails.
I firmly believe that through earning the registered dietitian credential, I have a chance to impact the health outcomes of my family, friends, neighbors, future patients, as well as future generations. I am confident that the Dietetic Internship and Masters of Public Health (DI/MPH) program at the University of Texas School of Public Health (UTSPH) is the ideal environment to prepare me in the pursuit of my primary long-term goal of developing a career as a research dietitian. This internship has giving me the chance to observe and witness firsthand the daily activates of a dietitian. Also I have seen how rewarding a dietitian’s career can be in helping others obtain their goals for a healthier life. Over the semester I was able to watch one successful client lose over 25 pounds and reverse her prediabetes health parameters. This has truly shown me that this is the right career for me because I want a job that I can help other. Before I started this internship I wanted to observe nutrition counseling and learn how to effectively use it. Another goal I had for my internship was to practice the nutritional skill I acquired in my undergraduate curriculum. Over the semester I was able to practice menu planning, observe nutrition counseling, nutrition assessment, and create nutrition education handouts. This internship has also, reinforced my dream and goal of owning my own nutritional business. Being able to experience the entrepreneurial aspect of a dietitian with Texas Total Health has taught me so much and opened my eyes to what I need to do to obtain my goal later in life. When I first began college I was unsure of what career path I wanted to pursue, but I knew whatever I chose would lead me to a challenging and rewarding career. My first semester I enrolled as a biology major because of my interest in science and desire to work within the health care field. This same semester I also happened to be taking a nutrition class as apart of my general education, and I was introduced to the science of nutrition. As the semester progressed my passion for nutrition grew, while the feelings of uncertainty I had about my future career path began to dissolve. I was drawn to nutrition once I began learning about the effect that food has on our health, and realized I could help people suffering from diseases such as cancer and cardiovascular disease, which are so prevalent today. I knew that choosing to major in dietetics was going to require an immense amount of hard work and dedication, but I decided to accept the challenge and pursue a career in dietetics.

I am seeking a dietetic internship at California State University Fresno, to continue my journey in dietetics. As my mother was a single parent and immigrant to the United States with less than a first grade education, her desire to have a better life for me has always been present. Being a first generation Mexican-American and the first in my family to graduate college, I consider myself privileged to have the opportunities my parents never had. My journey to become a registered dietitian has been longer and maybe more complex than the average college students. As a first-generation college student I was faced with many challenges that to this day have shaped me in a unique way as a dietitian. During this year of my internship, I want to be able to reflect on my own growth, strengths and weaknesses and be open to feedback to improve as a dietitian.
I have studied BSc Nutrition with foundation degree for four years at South Wales University Newport. The course covered various aspects related to health and nutrition and included a variety of scientific modules. During my time in university I expanded my debating, discussion and presentation skills, and studying modules such as health psychology and applied nutrition have improved my communication and analytical skills. These opportunities have greatly helped develop my capacity for thinking creatively about how to promote healthy lifestyles.
Even though this could likely change over my next two years of schooling, it is reassuring to know that it is not just one area of dietetics that I want to work in. For example, I have always been interested in sports, so I think it would be really interesting to get to work with athletes. On the other hand, I also think that it would be extremely interesting to work at a school, campus or university. Once I was old enough to realize what I was being fed at school I started packing lunches, and then in high school I never went through the lunch line. I think it is extremely important that quality food is served to students in school. Also, I am interested in the idea of a supermarket registered dietitian. Shoppers may only go to their family doctor once or twice a year, but many of them go to the grocery store once or twice in a matter of a few weeks. These registered dietitians can have a great influence on the choices that shoppers make when at the grocery store. Because of I kept eating junk foods for most of the times, I gained a lot of weight and made a new record of body weight. Since then I decided to incorporate exercise and low-calorie snacks in my diet. While I was dieting, I got interested in food and cooking. I was very bad at cooking, so I wanted to learn how to cook and know healthy foods for my long life. And so I decided to go to culinary school to gain knowledge, skill, and learn how to please people through food.
In the above paragraph I have gained the knowledge on how to balance me and my family's lifestyle. I already knew we needed to be eating health and staying active. It is hard to do so in a busy world. But, this course has definitely reinforced on how to stay healthy and fit and implement new things in my life. This course has also reinforced just as you should get a physical annually, your child needs regular well check-ups. Something further that I have been able to balance and reinforce is getting in a good habit is eating a variety of fruits and vegetables daily. Choosing whole grains as much as possible over refined ones will give your child more nutrients and fiber. Make an effort to avoid foods that are processed, high in sugar or high in saturated fat, all of which can increase risks for health problems such as diabetes. Especially helped reinforce with my diabetes.
A majority of individuals that inhabit this universe were not born with a talent. I, unfortunately was no exception. I grew up stumbling through different sports teams and art classes. From playing games of softball to attending pottery classes, nothing really stuck to me. I was beginning to doubt I would ever find anything I was truly passionate about until recently. I have realized that I am passionate about food. Not just eating it, but also studying it as it is processed though the body. I was initially introduced to nutrition through my own poor eating habits. I was on the verge of becoming obese when visited a Nutritionist. I was very overwhelmed with my diet changes at first, but then became amazed at how much better I felt mentally and physically. I was so inspired by this that I decided that becoming a Nutritionist would be something that I want to do for a living. The quizzes from The College Foundation of North Carolina seemed to support my decisions as well, making me even more confident to pursue a career doing my passion.
