Due to this they started a “Dish Up” program where high schools produce for their needs and for the needs of elementary schools in the district.Food production is thereby centralized at a central kitchen and at regional kitchens. This combination affords them efficiencies in labour and the capacity to satisfy the needs of the school district. (National food Service Management Institute, 2002).

A menu is a list a certain types of food items and beverages that are offered by establishments to their consumers for a particular period of time which can be served for breakfast, lunch or dinner. Planning of recipes and menus is important because it allows establishments and outlets to think ahead in terms of food production planning. It also makes maximum use of of the available resources which include food in season, tools, equipment, fuel, food supplies and budgetary allocations.
