She can consume more dairy low fat or fat free products (3 cups/day) that are rich in Vitamin D and calcium or she should use calcium (1200 mg) and vitamin D (10 μg) supplements. Also, based on 24-hour recall Sheila’s fruits and vegetables consumption is limited this may cause vitamin C and E deficiency.
Based on a 24 Hour Recall of my diet, results using NutriCalc Plus report that my food intake lacked a healthy balance of all food groups. My Grain intake reached only 60% of the My Plate daily recommendations. My Vegetable intake was a mere 50% of the recommended servings. Additionally, I consumed 84% of the daily recommendations for the Dairy Group. Nonetheless, I did exceed the recommendations for the Fruit Group and Protein Group with intakes of 155% and 107%, respectively.

My diet in comparison to the Canadian Food Guide, was noticeably inconsistent with the recommended number of servings per day. I was unable to meet the recommended serving for all of the the food groups. Out of all the groups milk and meat alternatives serving were the lowest. Furthermore, there was a lack of variety within the diet, over the course of three days the meals tended to be the same . It can be argued that portions sizes were relatively small. Although some days there was an adequate amount of vegetables & fruits, there was inadequate average intake overall.

I also thought Mrs. E.B.'s diet was deficient in vitamins D and E. Vitamin D is found in only a few foods I think replacing the coffee and wine with milk is a good idea especially since it is fortified with vitamin D. The one thing she does have in her diet is vitamin A the casserole she eats contains meat, green beans, carrots, or corn. Vitamin A is important for immune function, bone health, and vision. After reading the chapter i found that alcohol consumption actually depletes Vitamin A in the body. Since Mrs. E.B. drinks a lot of wine i think it would be in her best interest to cut down the amount of wine she drinks.

Looking at the above increase list, I decided to increase my portion of vegetables to at least 1.5 cup by including more variety of veggies to my morning breakfast smoothies and as a side of salad or steamed veggies at every meal. Vegetables are excellent sources of an array of vitamins especially brightly colored veggies and dark green veggies. By including more veggies in my diet, I am essentially helping myself “up” my intake of vitamins as well, since I am especially low in vitamin A, vitamin B1, vitamin B2, vitamin D, vitamin E and folate, by increasing consumption of veggies from different subgroups like brightly colored veggies ( e.g. sweet potatoes, carrots and red peppers) , dark leafy greens (e.g. kale, collard and spinach) and cruciferous vegetables (e.g. broccoli, brussels sprouts and cauliflower), which are packed with vitamins like vitamin A, vitamin B1, vitamin B2, vitamin B6, vitamin C, vitamin E and folate. Next on my list, is to increase my dairy intake by including low-fat yogurt and fortified soy milk, for example, 1 cup of Silk soy milk provides not only vitamin D, but also vitamins A and vitamin B12. This will help me increase my vitamin D intake, which I was sadly below the recommendation. Also by including more fatty fish like salmon and tuna in my diet will also help me increase my vitamin D intake. Another good source of vitamin D intake is the sun, so spending some time early in the mornings without sunscreen will also help me achieve this goal.
