Bacteria can be found everywhere and in everything. It’s in the food you eat, on the things you touch, and even in the air you breathe.

Escherichia coli (E. coli) are Gram-negative, rod-shaped bacteria. Gram-negative bacteria can cause many types of disease and infection, E. coli specifically is usually found to be the cause of diseases in food. As this bacterium is developed within the human body colon, its ideal growing temperature is about 37°C, and it’s best growing environment is the mammalian gut.

Other strains of the bacteria may cause diarrhea, respiratory illnesses and food poisoning. Some strains such as O157:H7 can cause kidney failure or severe anemia. Exposure to E.coli can be in the form of food, water, undercooked meat and even raw vegetables. It was first detected in the stools of babies in 1885. (Gould, 2011) It is named after Esherich, the scientist who 1st isolated it. E. coli is the organism most known for causing urinary tract infections and is especially known for being a main contributor of diarrhea for individuals traveling overseas.
A pressing issue in our society is focused on the food industries. There have been many outbreaks of E.coli poisoning especially in the popular food chain Chipotle since late in 2015 to today. E.coli poisoning is a bacteria that lives in our intestines and can cause infections in the body if contracted. Our bodies can contract E.coli from not only food but also water. According to U.S Food and Drug Administration and The Centers for Disease Control and Prevention, the infection of E Coli poisoning has been linked to many Chipotle Mexican Grill Restaurants. According to the CDC has reported as many as 55 people who have been effected by E.coli poisoning in 11 states. According to the New York Times, they reported roughly 500 people the Pacific Northwest all the way to Boston have become ill
E. coli, Bacteria (Domain), Proteobacteria (Phylum), Gammaproteobacteria (Class), Enterobacteriales (Order), Enterobacteriaceae (Family), Escherichia (Genus), coli (Species), is a gram-negative, facultative anaerobic, rod-shaped bacterium, with optimum growing temperatures at 37° C. This bacterium is commonly found in the lower intestines of warm-blooded animals. E. coli makes up about 0.1% of gut flora and most strains are harmless. Some are part of the normal gut flora and help their host by producing vitamin K2 and preventing colonization of the intestine with pathogenic bacteria (CDC, 2014). E. coli makes ATP by aerobic respiration if oxygen is present, but can switch to fermentation or anaerobic respiration if oxygen is limited or absent. A large number of bacteria live and thrive in the colon and are referred to as the gut flora. These gut flora help in breaking down certain nutrients that the human body could not. Many of these microorganisms in the world are pathogenic by nature but are treatable by a wide number of antibiotics, some are normal flora in the body, and others are opportunistic ones.
