Food Macromolecules Lab Results When we determine what kinds of organic molecules are in food products, we use a series of chemical tests and compare the results to a battery of known results. In order to prepare for testing the unknowns, we first must test some known substances against the solutions that are classically used. Observation Table 1 - Iodine Indicator (Lugol’s) Test Substance Macromolecule Observed Result (Describe) Color Positive or Negative? 1. Sugar Solution (grape juice) Simple Carbohydrate The water was orange and about the same color as the iodine. Orange 2. Corn Starch Solution Complex Carbohydrate The orange iodine lipid turned into a dark black color. Black 3. Vegetable Oil Lipid The oil and iodine created a bubbled substance and had an orange color. Orange 4. Egg Whites Protein The egg whites were orange, but a more yellow orange than the rest. Yellow- orange 5.
