Your idea of a case study is a good idea. There was a local community college, where I once lived, that offered an accounting course. The syllabus assigned 60% to a case study where you had to balance the books of a small company, as well as a final exam worth 40%. Soon after taking this course my father took over a small company and that course saved us a great deal of money and legal problems. The original books were only a step above fraud and had to be redone before the end of the tax year. Although I didn't use it to get a job I would definitely have respected the credentials of anyone who passed that course.
