To explain: In which ways foods become contaminated with enteric organisms.
Introduction: Preservation of food is commercially important. It involves process such as enzymatic browning reactions such as in apples, prevention of growth of microorganisms, slowing down the oxidation of fat that is responsible for rancidity. One of the traditional methods of food preservation is fermentation.
Explanation of Solution
Enteric organisms are those that reside in intestines of animals. Enteric organisms are either symbiotes which can aid the digestion of their hosts, or pathogens that cause disease to the hosts. The enteric microorganisms contaminate food through the air, water, or soil. Enteric microbes enter the prepared food if it is exposed without packed properly.
