Chapter 14, Problem 24SAE
Summary Introduction
To review:
The definition of biological terminology, “emulsification.”
Introduction:
Bile is the major emulsifying watery solution produced by the liver. Bile contains bile salts that emulsify the large fat globules. The bile salts emulsify the fat globules and facilitate the action of fat digesting enzymes. This is achieved by increasing the surface area and making the large globules smaller to facilitate the action of enzymes that degrade fats.
