Interpretation:
In the structure of human insulin, to indicate where in each chain the molecule is cleaved by trypsin and chymotrypsin.
Concept introduction:
Partial hydrolysis of a peptide can be carried out using enzymes which are specific in their action. The enzyme trypsin catalyses the hydrolysis of peptides only at the carboxyl side of the basic amino acids arginine and lysine. The enzyme chymotrypsin cleaves only at the carboxyl side of the aryl substituted amino acids phenylalanine, tyrosin and tryptophan.
