To explain: The reason why with some strains of yeast, fermentation stops before the sugar exhaustion, usually at an alcohol concentration in excess of 12 percent.

Introduction: Fermentation is an anaerobic process in which energy can be released from glucose even when the oxygen is unavailable.  Fermentation takes place in the cells of yeast, and a form of fermentation takes place in bacteria and also in the muscle cells of animals. Fermentation is an important way of making adenosine triphosphate (ATP) without oxygen.
