Chapter 3, Problem 53DSP
Interpretation Introduction

Interpretation:

The dihedral angles in the β-pyranose form of D-ribose are to be identified.

Concept introduction:

In the chair form of cyclohexane, when two substituents on adjacent carbon atoms are both axial, the dihedral angle between them is 180°. They are anti to each other.

When a substituent on one carbon atom is axial and the substituent on adjacent carbon atoms is equatorial, the dihedral angle between them is 60°. They are gauche.

When two substituents on adjacent carbon atoms are both equatorial, the dihedral angle between them is 60°. They are gauche.

A second category of six-carbon carbohydrates, called ketohexoses, has the constitution shown. How many stereoisomeric 2-ketohexoses are possible?
When a pyranose is in the chair conformation in which the CH2OH group and the C-1 OH group are both in axial positions, the two groups can react to form an acetal. This is called the anhydro form of the sugar (it has “lost water”). The anhydro form of D-idose is shown here. Explain why about 80% of d-idose exists in the anhydro form in an aqueous solution at 100 °C, but only about 0.1% of D-glucose exists in the anhydro form under the same conditions.
How much lactic acid (C3H6O3) is produced when 225g glucose (C6H12O6) is used as a substrate in fermentation. Assuming that the sugar is completely fermented to lactic acid.
