The order of melting points for triglycerides containing the given fatty acids is to be predicted.
Concept Introduction:
Fatty acids contain carboxylic group at the end of a long hydrocarbon chain. The melting point of the compound depends on various factors. These factors are molecular weight and the presence of double bonds. The molecular weight of the compound is directly related to its melting point. The melting point increases with an increase in molecular weight. On the other hand, the melting point of the fatty acid is inversely related to the extent of unsaturation.
