Cope elimination:

When tertiary amine reacts with hydrogen peroxide, it forms tertiary amine oxides which then undergo a reaction similar to Hoffmann elimination reaction is called Cope elimination.

The nitrogen atom in the tertiary amine acts as a nucleophile and attacks an oxygen atom of peroxide that results in the formation of hydroxyl ammonium ion along with hydroxide ion, this ion under goes an elimination reaction to gives an alkene with tertiary amine.
