Question
Chapter 7.1, Problem 2CC
Summary Introduction
To explain: The characteristics of the membrane lipid compositions for the soil found in cooler regions vs. soil found in a warmer region.
Introduction: Cells are surrounded by a layer of phospholipids called a plasma membrane. Variation in the lipid composition of an organism has risen due to evolutionary adaptation. An organism living in a hot region significantly differs in the membrane lipid composition from an organism living in a cold region. This appears to maintain the membrane fluidity that is essential to allow a molecule to enter and exit.

- Q14arrow_forwardExperiment 1: Functional properties of starch in a food product There is wide within-species variation in starch content and composition. Rice can vary from “waxy” types with virtually no amylose in the starch to “normal” types with perhaps 20% amylose. Desserts made from different types of rice flour have very different properties, especially texture. Materials: Two types of rice flour (soaked in 64 ml of water) • Glutinous (waxy, 1% amylose) • Non-glutinous Sugar (finely granulated) Baking powder Salt Procedure: 64 g each 25 g 1 g 0.5 g Laboratory 1 Properties of Starch Starch is made up of amylose and amylopectin in various proportions. Because amylose and amylopectin have very different physicochemical properties, the types of starch and thus the amylose to amylopectin ratio significantly affects the sensory characteristics, especially the texture of food products. Objective: To compare the texture of steamed dessert made from glutinous and non- glutinous rice flour Procedures: 1.…arrow_forwardIn the figure below showing changing surface charges on a protein molecule, explain why the surface charge is positive at low pH, then ends up negative at high pH. | At lower values of pH, proteins i At higher values of pH, proteins | will carry more positive charge. will carry more negative charge. The graph below shows the fluidity of liposomes composed from 4 different phospholipid bilayers. Melting curve 'a' corresponds to a membrane composed of phosphatidate linked with hexadecanoate fatty acids. The melting temperature, Tm, for that membrane is indicated on the graph as a dotted vertical line. At temperatures below the Tm, the membrane becomes more gel-like and much less fluid than above the Tm. Curve b) The compositions of the other 3 liposomes are listed below (numbered 1-3). Match the liposome compositions to the different melting curves (labeled 'b', 'c' and 'd' on the graph).
