The fermentation is the process of conversion of pyruvate to ethanol by a single celled organism called yeast in a very low level of oxygen. This pyruvate leads to the formation of lactate in the cytosol of a cell. The formation of lactate is one of the fates of pyruvate.

Anaerobic glycolysis (i.e., lactic acid fermentation) produces pyruvate that is then converted to lactate through the activity of lactate dehydrogenase.
